1. An enzyme linked immunosorbent assay (ELISA) was used to study the immunochemical properties of ovalbumin altered by the reaction with oxidizing methyl linoleate under various conditions. 2. The results indicated that the values of ELISA decreased with an increase of the degree of ovalbumin following reaction with oxidizing methyl linoleate. 3. The antigenicity of ovalbumin, when examined by competitive inhibition assay, reduced about 20-fold as compared with native ovalbumin when reacted with oxidizing methyl linoleate at 50 degrees C and water activity (0.68) for 30 days.
